Dark chocolate panettone baked in Milan by Pasticceria Vergani, belonging to the “Gourmet” range. Naturally leavened panettone without sultanas and candied orange peel. The artisanally prepared dough containing flour, natural sourdough, butter and fresh egg yolk is enriched with fine dark chocolate of the Vidamà variety, at the beginning from the Ivory Coast (Oulaidon province). The cocoa of the province of Oulaidon is included in a fair trade project in an instant taken care of by the ChocoFair Cote d’Ivore network, which is answerable for protecting the biodiversity of promiscuous plantations and the development of cocoa stone processing. The cocoa is fermented for 6 days on banana leaves and boasts a pleasant scent thanks also to the exchange of pollen with the wild orange, mango, wild coffee and cardamom plants nearby. Store the panettone in a cool dry place. Ingredients: type “0” soft wheat flour – Grand Cru Vidamà dark chocolate (22%) (cocoa grains – brown sugar – cocoa butter – soy lecithin, cocoa min 60%) – butter (milk) – sugar – egg yolk – natural yeast (soft wheat flour type “0” – water) – orange paste (orange peel – glucose-fructose syrup – sugar) – honey – emulsifiers: mono- and diglycerides of fatty acids – salt – whole milk powder – natural flavouring, natural vanilla flavouring. Allergens: wheat, soy, milk, eggs. It’s going to contain traces of nuts. Pasticceria Vergani has been baking traditional-style Panettone for over 75 years. It’s the only (and last) Milan-based company producing Panettone on a big scale in facilities positioned in Lombardy’s capital. The real secret to Vergani’s great Panettone is the sourdough starter, created by the founder many years ago, and refreshed 3 times a day as Milanese tradition dictates.
